biggamefish Posted January 2, 2024 Posted January 2, 2024 I am looking for a good Bear recipe. I know I could use my crockpot recipe for a stew or roast but looking for something tried and true that is new and tasty.
Otto Posted January 2, 2024 Posted January 2, 2024 (edited) Here’s my tried and true for venison, I did make this with bear one time and it was fantastic! Hunter’s Favorite Chili, from Dressing and Cooking Wild Came, Cy Decossee books 3 lbs game burger (I’ve used small chunks and that works too) 3 medium onions chopped 3 medium green peppers (or red, yellow for color) 1/2 cups chopped celery bacon fat or veg oil 1 28oz can whole tomatoes, undrained 2 Tablespoons dried parsley 2 Tablespoons Chili powder 1 teaspoon salt 1 teaspoon pepper 1/2 teaspoon garlic powder 2 15.5 ox cans kidney beans, undrained 1 16oz Pinto beans, undrained In Dutch Oven brown meat over medium heat, stirring occasionally . Remove meat from heat and set aside. In large skillet, cook and stir onions, green peppers, and celery in bacon fat. Add vegetable mixture and all remaining ingredients except beans to Dutch oven. heat to boiling, then reduce heat, cover and simmer 1 hour. After 1 hour add beans, cook, uncovered 30 minutes longer. You just have to treat it like pork because it can carry trichinosis. I posted my NJ bear. Didn’t see any in NY while on any of my four trips. But we never see bears in Otsego. They are there, just not in big numbers like north Jersey has. Steaks I make like any other steak. Sometimes I marinade them and sometimes not. This recipe is great for a universal chili recipe and it makes a lot. You could build off of this with different spices and make it your own. Thanks for the recommendation. Otto 1
