Looking for a good bear recipe

Here’s my tried and true for venison, I did make this with bear one time and it was fantastic!  

Hunter’s Favorite Chili, from Dressing and Cooking Wild Came, Cy Decossee books

3 lbs game burger (I’ve used small chunks and that works too)

3 medium onions chopped

3 medium green peppers (or red, yellow for color)

1/2 cups chopped celery

bacon fat or veg oil

1 28oz can whole tomatoes, undrained

2 Tablespoons dried parsley

2 Tablespoons Chili powder

1 teaspoon salt

1 teaspoon pepper

1/2 teaspoon garlic powder

2 15.5 ox cans kidney beans, undrained

1 16oz Pinto beans, undrained

In Dutch Oven brown meat over medium heat, stirring occasionally .  Remove meat from heat and set aside.

In large skillet, cook and stir onions, green peppers, and celery in bacon fat.   Add vegetable mixture and all remaining ingredients except beans to Dutch oven.  heat to boiling, then reduce heat, cover and simmer 1 hour. 

After 1 hour add beans, cook, uncovered 30 minutes longer.

Serve with grated cheddar and/or a dollop of sour cream.

Which cut or cuts?  Bear is closer to beef than venison is. You just have to treat it like pork because it can carry trichinosis. But any way you cook beef or venison will work fine for bear.

IF i ever got a bear was going to make 2 things with it for sure.  Maple Blueberry Bear breakfast sausage and Bear Beer brats.  

Burying the lead though.....  

Did you get a bear?  pics and story please!  I dont think a single person posted a bear this last season.....

I posted my NJ bear. Didn’t see any in NY while on any of my four trips. But we never see bears in Otsego. They are there, just not in big numbers like north Jersey has.

I have some typical cuts. A roast and some chop meat. I have had bear meat before and i think it is delicious. The above recipe looks great so I might try that one. Thanks @Otto.
