I prefer my butcher to have a parking lot full of carcasses baking in the sun under a blue tarp.

In Lewis county area I recommend millers.  They are a FT butcher shop.  Lots of options and very clean.  https://www.millersmeatmarketny.com/venison-season

In Madison county/Onondaga/Southern Oneida county I recommend Marsh Mill.  They do one deer at a time and it's always super clean.  Also a year round butcher. This place gets real busy.  Opening weekend of gun I always plan on doing my own.

Sure that's not too far from me. Do you have personal experience with having a deer done there? I usually butcher my own but the one year I didn't have time and tried a processor out in Schoharie they totally mangled the deer.
