Potatoes and ham gravy and raisin gravy. Still trying to figure what other sides are. Veggie and fruit tray. Shrimp cocktail charcuterie board of meats and cheeses. We usually have too much say every year well down size but never do. I'll post up other stuff when we figure it out tomorrow. Oh yea chestnuts. Wolc123 and Stubborn1vt 2

NYRturkeycall Posted December 24, 2024 Posted December 24, 2024 Cold shrimp platter with cocktail sauce cold antipasto course, charcuterie board of like 8 cheeses, lox with goat cheese and lemon zest, fruits, crackers Then a lobster per person that we steam outside with a scotch, bacon wrapped scallops that my wife makes, fried breaded flounder, fried calamari, linguine with clams/mussels/shrimp /calamari and red sauce, mixed salads, broccoli with lemon and garlic, plenty of Italian bread to go around. Desert is dealers choice who brings pies and cakes, and home baked sugar cookies , grinch cookies, and my wife's rainbow cookies. Espresso with sambuca, cappuccino and coffee. Desert liquors, homemade Bailey's, plenty of beer whiskey and liquor, egg nog, homemade white Christmas sangria, and chocolate white Russians trimmed in peppermint on the rim. We like doing Christmas Eve. It's the best holiday of the year for the family And our kids will have awesome memories growing up. It's a shit ton of work though LOL. Apps...cold shrimp platter and thiny sliced venison chops served on a baguette topped with blue cheese crumbles and picked onions with a drizzle of balsamic vinaigrette. Main meal baked chicken, roast beef Sammy's on a kimmelweck roll. Chef salad and cheesey potatoes. Cake, cookies and god only knows what else for desert. Lol The only killer is the sauce! ”Tenderloin Steaks with cranberry-port sauce and Gorgonzola cheese” Recipe information Yield Makes 4 servings Ingredients 4 tablespoons (1/2 stick) butter 2 large garlic cloves, sliced 1 large shallot, sliced 1 1/4 cups canned beef broth 1 cup ruby Port 1/4 cup dried cranberries 4 5- to 6-ounce beef tenderloin steaks (each about 1 inch thick) 1/2 teaspoon minced fresh rosemary 1/2 cup crumbled Gorgonzola cheese Preparation Step 1 Melt 2 tablespoons butter in saucepan over medium-high heat. Add garlic and shallot, then 1 cup broth, Port and cranberries. Boil liquid until reduced to 1/2 cup, about 8 minutes. Set sauce aside. Step 2 Melt remaining 2 tablespoons butter in large skillet over medium-high heat. Sprinkle steaks with salt and pepper. Add steaks to skillet; cook to desired doneness, about 5 minutes per side for medium-rare. Transfer steaks to plate; cover loosely with foil. Buckmaster7600 Posted December 24, 2024 Posted December 24, 2024 (edited) We had our dinner this evening, home grown beef tenderloin with all the sides. Lake O smoked salmon and smoked cream cheese were some of the appetizers and a few pies for dessert. I'd smoke it at 225° till just about rare, then into a 500° oven for 15 minutes. Med rare from tip to tip, and so friggin tender. Redneck4Life and Wolc123 2

No smoker for me, so low and slow in the oven. Dolled it up with Montreal seasoning , salt and minced garlic. Garage fridge smells amazing! Redneck4Life and mowin 2
