mowin Posted December 30, 2024 Posted December 30, 2024 Client gifted me a fully cooked smoked duck. It's vacuumed sealed. They didn't provide any reheating or prep instructions. I've tried several wild cooked duck, and they were horrific. How do I prepare this? @Chef any recommendations? Thinking SV @165° for 3-5 hrs? Oven at 200° for a couple hours, then very hot 500°?

I would use different parts for different things thr brests if not well done I would reheat in a pan skin side down till crispy. the legs I would look up recipes that use duck confit and use the leg meat for that you could also try duck fried rice or duck tacos with the hinds mowin 1
