Looking for a good breakfast sausage recipe.

If it's not a family secret, please share.  Making 30 lbs on Saturday.  Already picked up some pork shoulder on sale for $.99 lb.

If you have an Amish or Minonite store nearby they prob have some great choices.  I get most of my sausage spices there and then add my own twist.  Made apple breakfast today with apple sausage spices from there and some apple butter.

I made pork sausage though.  I no longer use venison for sausage.

I actually do.  I'll have to check them out.

Thanks for the tip.

I like to make kinds you won't find in a regular grocery store.  This place has a lot of choices.  https://waltons.com/categories/sausage-seasonings

Next round I will make a Tuscan vodka rope with spices from Walton's and add in some roasted red peppers. And also a smoked apple with some high temp cheddar.

Which store do you use?  I'm in the CNY area - would be great to know what options are available for this sort of thing.

We typically have sausage, hot dogs, snack sticks, etc. made up by an outfit near where we hunt in Steuben County but my boys are really showing some interest in doing it ourselves.  My oldest wants to buy the necessary equipment (I won't make him do that - I'll buy it myself :)) but I'd like to foster this interest and be less reliant on others.

The olde country store in Vernon on rte 5.  They have spice mixes there and on the bottom they put how many ounces to put in for venison sausage etc.   I really like the smoked sausage flavor they have.  The cracked pepper and some diced jalapenos make a great brat too.  Also the maple and add in a packet of fresh or frozen blueberries.

If your going to case them try out Syracuse casings, you can find them at price chopper.

I too somewhat quit on venison sausage with the exception of the smoked(50/50) cheddar jalapeño. I never found the right ratio to get the right consistency when using venison when making regular Italian sausage

It's like going to the store and buying 95% lean ground beef and say your going to make sausage out of it.  Although it can be good it will never be better than pork sausage for consistency, flavor and smoking.  I use all my ground venison now for burgers, meatloaf, Shepards pie, meatballs etc.

I enjoy making my own...I do not however enjoy the clean up after!

Instead of him buying the gear, make him commit to the clean up!

Went to my local Amish store today.  I was impressed with all the different spices and seasonings they had. Picked up a bunch of stuff.  Got the sage breakfast mix and the smoked sausage mix for Saturday.

Thanks again for the tip.
