I get most of my sausage spices there and then add my own twist. Made apple breakfast today with apple sausage spices from there and some apple butter. I made pork sausage though. I like to make kinds you won't find in a regular grocery store. We typically have sausage, hot dogs, snack sticks, etc. made up by an outfit near where we hunt in Steuben County but my boys are really showing some interest in doing it ourselves. My oldest wants to buy the necessary equipment (I won't make him do that - I'll buy it myself :)) but I'd like to foster this interest and be less reliant on others.

The olde country store in Vernon on rte 5. They have spice mixes there and on the bottom they put how many ounces to put in for venison sausage etc. I really like the smoked sausage flavor they have. The cracked pepper and some diced jalapenos make a great brat too. Also the maple and add in a packet of fresh or frozen blueberries. If your going to case them try out Syracuse casings, you can find them at price chopper. Although it can be good it will never be better than pork sausage for consistency, flavor and smoking. I enjoy making my own...I do not however enjoy the clean up after! Instead of him buying the gear, make him commit to the clean up! escpen and Robhuntandfish 2
