Probably too late for todays boil but a rudimentary lid fabricated out of two pieces of tin foil will speed the job up considerably.

We achieved simmeration fairly quickly

i've done them and they're an absolute PITA. best way i've come to realize is a couple friends use an electrical turkey roaster. no flame to babysit. simmer away and come back later. easier to not put too much heat to it.

plus my turkey cooker is newer and has a stupid safety solenoid on it. if you're not there to push the button every 10 minutes or so it'll shutoff the propane. if the batteries die it'll shutoff the propane.

I've done my own euros with good results.

 

A few years ago, I got an electric bucket heater from TSC, like this one:

I put that in a rubber feed bucket with the skinned head and it simmers at a low enough temperature that I can just leave it until it's done without worrying. 

 

After that, I soak in ZEP degreaser, then mix up a paste of powdered and lotion hair bleach. Paint that on and leave overnight. Rinse in the morning and you're good to go.
